For our barbershop, 90%+ appts are booked less than 48 hours before. Most 24hrs or less. Clients liked (on a previous booking app) they could see the calendar, see who's working, and their available slots. Pick the time, add their service. In a barbers services are a lot fewer than the salon, so a "time led" flow rather than stylist / service led flow would be better.
