Remove mobile telephones on the appointment page (these should not be shown for any access level due to client confidentiality) but still be able to see clients numbers when booking an appointment

Could you tell me where that setting would be please?
I know access levels provide this feature but i still need to see numbers when i book an appointment so setting the access level does not solve the problem.
Phorest could not help me but would be great if you can?
